Nice mild but building kick from the jalapeño—great idea! Tasty. I didn’t have avocado so subbed in a little Mayo, added shredded apple and some fine shredded yellow bell pepper. Delicious!

Made it in a pinch for some pulled pork that came out too salty and it turned out great! I did just use a power mix of shredded veggies I had on hand i had instead and didn’t have a jalapeño. I bet it’s even better with more time to sit and a little spice!
