- 3/4 cup oat flour (ground up rolled oats, gluten free if necessary)
- 1/4 cup oat bran (gluten free, if necessary)
- 1 1/2 cups rolled oats (gluten free, if necessary)
- 1/2 tsp. baking powder
- 1/3 cup coconut sugar (or date sugar)
- 1 1/2 tsp. ground cinnamon
- 1/4 tsp. ground ginger
- 1/4 tsp. salt
- 1 banana (medium, ripe and mashed)
- 1 1/4 cups pumpkin puree (pure, not pumpkin pie filling!)
- 1/4 cup milk (any non-dairy or dairy milk should work)
- 3 Tbsp. coconut oil (melted)
- 1 1/2 tsp. pure vanilla extract
- 1/4 cup dark chocolate chips (chopped, I use Enjoy Life)
