I added corn and red beans avoided the rice in casserole instead made rice separately. It turned out very good juicy and gooey from cheese. My daughter loved it and turned out to be a healthy alternative instead of pizza.

These were good ... Added in a can of black beans and a cup of frozen corn. We ate as a casserole, but think I'll serve along with the tortillas next time.
