- 1 red bell pepper (medium, chopped, about 1/2 – 1″ pieces)
- 2 cups green beans (cooked, cut into approximately 1″ pieces)
- 4 garlic cloves
- 4 tsp. crushed garlic
- 5 Tbsp. curry powder
- 1 tsp. canela
- 2 tsp. paprika
- 1/2 tsp. salt
- 1 tsp. fresh ginger (grated)
- 1 tsp. lemon juice
- 1 tsp. cayenne pepper (do less if you don’t want it spicy – this amount gives about a medium heat level)
- 2 Tbsp. tomato paste
- 1 cup nonfat greek yogurt (plain)
- 1/2 cup coconut milk (light)
- 1/2 cup chicken broth (— add more if you want a runnier curry)
