- 1/2 tsp. baking soda
- 3/4 tsp. salt
- 1 tsp. cinnamon
- 1/3 cup sugar (unrefined if desired, or xylitol for sugar free)
- 1/16 tsp. stevia (uncut, OR 2 tbsp more sugar)
- 1/2 cup raisins (optional)
- 1/2 cup applesauce
- 1/3 cup oil (Some readers say they subbed applesauce with good results! I haven't tried)
- 2 tsp. apple cider vinegar (or white)
- 2 tsp. pure vanilla extract
- 1 shredded carrot (packed cup, 200g)

Very yummy, added desiccated coconut as that’s what Yummly app states as the recipe (27g of coconut) but on the actual website it says 1/3 cup of coconut oil. So did both. Very pleased .

These cupcakes are absolutely delicious. I did not go the gluten-free or vegan route. I used white flour, and regular sugar. These cupcakes are moist with just the right density. These are a keeper! For the icing I used 4 oz cream cheese, powdered sugar and a touch of lemon juice..

Made this one for my daughters. I split the applesauce half-half with orange juice and added some ginger ad omitted the raisins. they were delicious!! In the words of my 15 month old..."yumm yumm"
