Description
A Healthy Carbonara is full of fiber and taste, its gluten free to. The white sauce is made from cauliflower and coconut cream add some free range bacon and organic grass fed cheese and your done, well just about.
Ingredients

- 1 cauliflower (medium size, cut into florets)
- 1 can coconut cream (organic full fat)
- 3 Tbsp. grass-fed butter
- 2 Tbsp. water
- 1/2 lemon
- 4 slices bacon (free range, I just used the eye part cubed)
- 1 cup grass-fed cheese (grated organic)
- 2 Tbsp. Parmesan cheese (grated organic grass fed, extra for serving if desired)

Directions
- Pulse cauliflower into rice size grains and cook until tender around 20 minutes.
- Add rest of ingredients until butter has melted.
- Put in food processor or use a stick blender and blend until smooth.
