- 1/2 cup whole wheat flour
- 1 cup old-fashioned rolled oats (or oat bran)
- 3/4 cup brown sugar
- 1 Tbsp. ground cinnamon
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 tart apples (large, peeled, cored and shredded)
- 1 1/2 cups shredded carrots (finely)
- 1/2 cup chopped walnuts (or flaxseed meal)
- 1/2 cup raisins (or dried cranberries)
- 2 eggs
- 1/2 cup milk (I used almond milk)
- 1/4 cup oil (I used a blend of extra virgin olive oil, coconut oil and sesame oil)

It was pretty good - I subbed 2 bananas for eggs and oat milk instead of cows milk. It was really good !

I substituted 1/4 of regular flour with almond flour. Moist and really yummy!

These were a hit with my co-workers! I used 1 apple and 1/2 cup of unsweetened applesauce.

They turned out great, super moist, I topped them with oats and used oat bran in the batter, along with wheat germ.

Great! I used GF flour, coconut sugar (less than the recipe). They were chunky with apples, raisins and carrots 😊😊
