- 1 cup egg whites (liquid)
- 1/2 cup eggs (liquid, an eggs beaters type)
- 2 cups squash (fresh - chopped, i used 2 zucchini and 1 yellow crooked neck)
- 1 cup mushrooms (chopped)
- 1 1/2 tsp. garlic powder
- salt
- pepper
- 1/2 cup green onions (choppped, approx 3-4)
- 2 cups red potatoes (par boiled and chopped boil for 20 minutes whole, then when cool, cut into small squares)
- 1 cup shredded cheese (low fat, any kind i used sharp cheddar)
- 8 slices canadian bacon

Oh my gosh this is fantastic! Healthy, satisfying , beautiful presentation & great texture. Only things I did differently were to microwave the diced potatoes for 5 min (great time saver), & cut Canadian bacon into bite sized pieces. Will make often.
