- 1/2 cup coconut sugar (you may also use an equal amount of light brown sugar, packed)
- 1/4 cup coconut (melted)
- 1/4 cup unsweetened applesauce
- 2 large eggs (lightly beaten, at room temperature)
- 2 tsp. vanilla extract
- 3 bananas (VERY ripe, peeled and mashed, should yield 1 and 1/4 cups of mashed banana)

Edit: Realized that the issue is that there is a mistake in ingredients listed in the recipe on this page. Should be 1 and 1/2 cup of flour, not 1/2 cup as listed above!
Made this recipe as directed with only substitution being butter for melted coconut oil. Bottom of bread was extremely soggy. Tried baking it longer but was still soggy. Not sure what I did wrong but would not make again. See edit above. Error ingredient list.

Very moist. I doubled the recipes. I used ½ cup of almond meal and the rest all purpose flour since I didn’t whole wheat. I used olive oil, added blackberries and strawberries in addition to blueberries and walnuts. Family liked them!!

Great recipe. I changed it up a little by replacing 1/2 cup of flour with almond meal and used mixed berries instead of just blueberries and berry applesauce (my son's organic GoGo Squeeze pouches🙂) It turned out super-moist and yummy!!!
