Whether you're running out the door and need a healthy meal in a hurry, or just want to take it easy in the kitchen, these light and refreshing lettuce cups are a great solution. (And the recipe is easy to double if you need more servings.) For wrappers, you can opt for crunchy iceberg lettuce or softer butter lettuce. The recipe is a Yummly original created by Sara Mellas.

- Peel garlic. Finely grate garlic and ginger into a large bowl. Add tamari, honey, and rice vinegar and whisk to combine. (Pro tip: To make the lettuce cups gluten-free, buy a brand of gluten-free tamari.)
- Coarsely shred carrot. Finely dice red pepper and water chestnuts, and mince scallions.
- Arrange chicken in a single layer in a glass pie pan. Microwave chicken according to package directions, then chop into bite-size pieces.
- Add vegetables and chicken to bowl with tamari dressing and toss to thoroughly coat.
- Divide chicken and vegetables evenly among lettuce leaves. Sprinkle sesame seeds on top, and serve immediately.
