Description
Whether you're running out the door and need a healthy meal in a hurry, or just want to take it easy in the kitchen, these light and refreshing lettuce cups are a great solution. (And the recipe is easy to double if you need more servings.) For wrappers, you can opt for crunchy iceberg lettuce or softer butter lettuce. The recipe is a Yummly original created by Sara Mellas.

- 1 clove garlic
- 1/4 inch fresh ginger (peeled)
- 2 Tbsp. tamari (or soy sauce)
- 1 Tbsp. honey
- 1 Tbsp. rice vinegar
- 1 large carrot
- 1 red bell pepper
- 4 oz. water chestnuts (canned, drained)
- 2 scallions
- 12 oz. Tyson® Grilled & Ready® Chicken Breast Strips (can also use Tyson® Grilled & Ready® Chicken Breast Fillets or Tyson® Grilled & Ready® Oven Roasted Diced Chicken Breast)
- 8 leaves iceberg lettuce (or butter lettuce, large, use a few more if leaves are smaller)
- 1 Tbsp. toasted sesame seeds

Directions
- Peel the garlic. Finely grate the garlic and ginger into a large bowl. Add the tamari, honey, and rice vinegar and whisk to combine.
- Coarsely shred the carrot. Finely dice the red pepper and water chestnuts, and mince the scallions.
- Arrange the chicken in a single layer in a glass pie pan. Microwave the chicken according to package directions, then chop into bite-sized pieces.

Easy to make and delicious! Up the measurements for more sauce if you're like me and drown your lettuce cups in sauce!

This was a quick and easy recipe. I made a few changes to the recipe. I used raw chicken and pan fried it in a little olive with several spices I have on hand. My kids loved it an we would make it again.

Better with cooking chicken in the tamari, rice vinegar, garlic, and ginger mix. We used ginger piwder instead, still came out very good!

We make this all the time now. Makes a lot of servings, and tastes delicious! We usually use a rotisserie chicken, just because our local market has some really good flavored ones - we’re partial for the lemon peppered and it goes great with the recipe.

very sweet and weird taste. only had sweet soy in the cupboard so would only recommend with normal soy
