  • 1 clove garlic
  • 1/4 inch fresh ginger (peeled)
  • 2 tablespoons tamari (or soy sauce)
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 large carrot
  • 1 red bell pepper
  • 4 ounces water chestnuts (canned, drained)
  • 2 scallions
  • 12 ounces Tyson® Grilled & Ready® Chicken Breast Strips (can also use Tyson® Grilled & Ready® Chicken Breast Fillets or Tyson® Grilled & Ready® Oven Roasted Diced Chicken Breast)
  • 8 leaves iceberg lettuce (or butter lettuce, large; use a few more if leaves are smaller)
  • 1 tablespoon toasted sesame seeds

    Directions

    1. Peel garlic. Finely grate garlic and ginger into a large bowl. Add tamari, honey, and rice vinegar and whisk to combine. (Pro tip: To make the lettuce cups gluten-free, buy a brand of gluten-free tamari.)
    2. Coarsely shred carrot. Finely dice red pepper and water chestnuts, and mince scallions.
    3. Arrange chicken in a single layer in a glass pie pan. Microwave chicken according to package directions, then chop into bite-size pieces.
    4. Add vegetables and chicken to bowl with tamari dressing and toss to thoroughly coat.
    5. Divide chicken and vegetables evenly among lettuce leaves. Sprinkle sesame seeds on top, and serve immediately.
