- 1 3/4 cups white whole wheat flour (or regular whole wheat flour)
- 1 1/2 tsp. baking powder
- 1 tsp. ground cinnamon
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 cup apple (grated)
- 1 cup apple (diced into ¼” cubes)
- 1/3 cup coconut oil (melted, or extra-virgin olive oil)
- 1/2 cup maple syrup (or honey*)
- 2 eggs (preferably at room temperature)
- 1/2 cup plain greek yogurt (I used full-fat but any variety should do)
- 1/2 cup applesauce
- 1 tsp. vanilla extract
- 1 Tbsp. turbinado sugar (also called raw sugar, for sprinkling on top)

These turned out very good. I used 1/2 whole wheat and 1/2 white flour. I was in a hurry and didn’t take care to bring the eggs and other ingredients to room temperature before adding to the melted coconut oil, so the oil solidified. I mixed it well enough to add it to the flour mixture. It was all very forgiving and still turned out great.

I didn’t have milk so I added a little milk and they turned out so delicious. Thanks for the recipe! Toddler approved.

Very tasty, great texture. I used Chinese five spice instead of cinnamon. Also used 2 cups of flour since thr apples were very juicy. Family loved it!

Good. The batter was a bit runny even with squeezing out the grated apple. I will try it again in the Fall with tart, green apples.

Not bad I only had wheat flour (not white wheat), used honey and olive oil also. May try with the other ingredients suggested I would make again. Great to share going to see how they last in freezer for a month

An excellent healthy muffin. The apple flavor came through nicely. The chunky apples added great texture. The muffins were nice and moist.

They came out really good. I think next time I might add more Cinnamon or some nutmeg. Otherwise very tasty.

Lovely apple flavor muffins. Wasn't to crazy about the texture, used WW flour instead of WW pastry flour. Next time would sub 3/4 cup AP and see how that goes...

Awesome muffins and part of a great start to your day! Feel free to sub in some AP flour for a different texture. The shredded and diced Apple textures play nicely together too.
