- 1 can black beans (drained and rinsed)
- 1 cup frozen sweet corn
- 1/4 cup purple onion (diced, omit if using a salsa with lots of onion)
- 3/4 cup chunky salsa (I like Jack's Cantina found at Costco)
- 3 cups lettuce (finely chopped)
- 2 Roma tomatoes (diced)
- 1 cup jack cheese (shredded Monterrey)
- tortilla chips (1 bag)
- 1 avocado (for garnish, optional)
- 1/4 cup fresh cilantro (chopped)

Yes this is great and easy to make especially if you have left over rice it’s really tasty but ensure you have sour cream and maybe even hummus on the side otherwise it was a bit dry - yum I will do this again !
