This dough turned out great. It rolled nicely and had enough stretch so that stretching it to close them after filling was easy. I only had 2% plain yogurt on hand, so I used 4 tablespoons of butter, which kicked the calorie count up to 200 (making 12 empanadas), used 1/2 cup cornmeal in place of 1/2 cup of flour, and added 1/2 teaspoon of baking powder. The yogurt gives the dough a little tang, and since we used the corn empanada recipe here on Yummly, it went with it really well. My partner thought it needed more salt but I didn’t, and it is supposed to be healthier.
