This was a really simple and easy recipe! This version of a Hawaiian cake mimics a carrot cake but with pineapples insteas carrots. It is very yummy. Instead of the roasted coconut on top, next time I'll add some sweet red cherries 🍒 and chopped pineapple. I would also do 3/4 cup of brown sugar instead of 1/2 a cup to the batter. Also, the cream cheese frosting by itself is amazing, I will use it for other desserts. It doesnt tell you how to store your cake but bc of the frosting I stored mine in the fridge with aluminum foil on top. Let the cake chill in the fridge first and this way when you add the aluminum foil very little of the frosting comes off. I took the cake out about 2 hrs before serving to let it get to room temperature and it was perfect!
