- 2 cups penne pasta (cooked of a high fiber, I use a Canadian PC blue menu brand and measure uncooked)
- 400 grams diced ham (I bought a pre-cooked ham.)
- 1 1/2 cups pineapple (fresh chopped)
- 1/3 cup sauce (pineapple, if you can't find this then sweet and sour would work as well)
- 1/4 cup light ranch dressing (or fat free)
- 1/4 cup broth (vegetable or chicken)
- 2/3 cup cheese (grated light)
- 2 Tbsp. coconut flakes (unsweetened, I use a Bob's red mill kind)
