Oh. My. God. 😍 it’s kind of like the mochi I’m used to (I think it’s Daifuku Mochi? The small round ones with fillings like bean paste) but take the filling out, crust up all the sides like a good brownie, and throw in some buttery, custardy mouthfeel. Like mochi and a Dutch baby had a baby, and a hint of coconut got involved somehow. I think this might be my new favorite thing, it’s taking a lot of self control not to have another piece while I’m writing this. And it’s fairly easy to make! I followed the steps exactly, but had to change bowls when I got to the canned ingredients because mine was too small. It did take a bit of muscle for me to mix it, the flour is pretty... sticky isn’t the right word. Springy? You know what I mean if you’ve used this type of flour before, and if not you should find out soon by trying this recipe!
