A delicious vibrant salsa that can stand on its own or be paired with nicely with chicken or pork!
Ingredients

4 SERVINGS
- 8 Hatch chiles (roasted, mild or hot depending on your level of spice)
- 1/2 onion (roasted)
- 1 garlic clove (roasted)
- 1/4 bunch cilantro
- 3/4 tsp. salt (or to your liking)
- 1 Tbsp. white vinegar
- 1/2 cup water

Directions
- Set oven to broil
- Add onion and garlic clove (in its skin) to a sheet pan and drizzle with olive and broil for 5 to 10 minutes turning every few minutes. You don't want to burn the onion and garlic, just get a nice light char on the outside
- Add all ingredients into a blender or food processor and pulse 10 to 15 times until desired consistency is reached
- Taste and adjust salt if necessary
