This was super yummy. I took someone else's recommendation and whirled up the stuffing ingredients in the food processor and then butterflied the pork tenderloin and stuffed it and tied it up with kitchen twine and roasted it. It took about 40 minutes in a 375 oven but was fantastic. Served with roasted carrots and my family loved it.

Delicious! We did not have any sun dried tomatoes so we added roasted red peppers and some fresh basil.

This is one of my favorite meals to make I put all my stuffing in a food processor and blend tell it makes a paste easier to stuff but still turns out amazing

It was amazing, i used marscapone cheese, romano shreds, sun dried tomatoes and grated parmasan...delicious!!!!

We really enjoyed the flavours in the stuffing/topping. I’ve never had a juicy pork tenderloin, why does it always turn out dry??? I cooked exactly to the directions.

Came out awesome! I sliced it laterally and stuffed the whole loin, then folded it back in shape and topped with mixture. After it was roasted I sliced it horizontally. Delicious!

Very easy and tasted great. Subbed a bit of homemade salsa since I didn’t have sundried tomatoes on hand. It was delicious. Will make again.

Tasted so good. Substituted olive oil with walnut oil and rubbed pork loin to keep it moist. Will do this again!

4th time I have done this recipe and love it. The last two times I have doubled the recipe and prepared it with a pork loin instead of tenderloin and it turned out delicious. Give it a try folks.

Loved it. I added chopped kalamata olives. When it was served, I drizzled balsamic vinaigrette.

Very easy yet packed with flavor. Be sure not to use too much sundried tomatoes or they will dominate over the spinach

I substituted red pepper for the sun dried tomatoes bc it is what I had on hand. Overall this was an easy delicious dinner to make on a weeknight. Had to cook it 10 extra minutes.

Turned out very good. I added more feta than the recipe called for. Next time I would also try some pine nuts in the filling.

Way better than I thought! I used sundried toms in oil and used the oil to brush over the pork to cook. Very yum

Everyone LOVED it!! Had to cook it an hour for it to cook throug, though. BUT, other than that, this is a wonderful, healthy, and tasty thing to eat!!
