Great taste! Difficult to remove from muffin tin... the hash brown “crust” separated a bit from the rest of the nest. I think I will reduce the amount of oil to 1/2 T next time, and invest in a silicone muffin “tin” for easy release of the egg nest. I will definitely make these again.

It was tasty, turned out to be my Saturday Brunch. I modified it a bit with a 6in cast iron skillet, fresh red grated potatoes (squeeze out juice before placing in pan), fried the bottom over the stove for 5 minutes, then placed in nuwave oven for 8 minutes, once brown, I added the egg mix and cheese (used monteray), cook for 3 minutes and was ready to eat in under 20 minutes of cooking. I traded the avocado for tomato.

The initial bake of hash brown is necessary to fully cook them. Cooking the entire cup without pre-cooking hash browns would risk the results by either: 1) under cooked hash browns even if you want a fully hardened yolk; or 2) dry extremely over cooked eggs to get the hash brown cooked. If you want a runny or medium cooked egg you must pre-cook the hash browns to achieve the desired results.
