This is a good comfort recipe with the hashbrowns and cheese. Even the corn is nice. I didn't do too much tweaking. I used pepper jack cheese for the extra kick, and I added pickled jalapenos instead of fresh and used a lot of them. We call this "death casserole" at home, but it's worth every bite.
