- 3 cups butternut squash (peeled cut into 1-inch pieces)
- 1 cup sweet potatoes (cut into 1-inch pieces)
- 2 cups potatoes (nugget, or small potatoes, halved)
- 1/2 cup bacon (ends, or 3 slices thick bacon, cut into half-inch pieces)
- 1 medium onion (chopped)
- 2 cloves garlic (chopped)
- 2 cups cremini mushrooms (halved if bigger than bite-size)
- 2 Tbsp. butter
- 1/2 cup red wine
- 2 cups apples (cored and cut into 1-inch pieces)
- 2 rosemary sprigs (large, plus more for garnish)

Surprising hit with my kids due to my modifying the recipe. I thought I had chicken thighs but once the squash & yams were in the oven, I found I had 2 boneless skinless chicken breasts instead. I also decided that the point of oven roasting is to not have to stand at the stove so I would bake the chicken too. I was worried about the chicken breast drying out in the oven, so I poured a bottled “steakhouse marinade” (tomato-based, lots of black pepper) on the chicken. To speed up marinating & baking time, I used dishwasher-safe kitchen shears to cut the chicken into 1-inch cubes. When the squash & yams had baked 15 minutes, I put them in a bowl and then put the chicken on to the baking sheet in top of the onions and baked the chicken at 425 for 15 minutes. Then I added back the squash & yams plus the apples (1/4-inch slices) and baked 5 more minutes. My daughter who normally dislikes chicken liked it due to the marinated flavor!
