- olive oil
- 1 onion (sliced)
- 1 tsp. ground cumin
- 1 tsp. coriander seeds (ground)
- 750 grams sweet potato (peeled and chopped into 1cm cubes)
- 2 cloves garlic (grated or crushed)
- 2 cms ginger (grated)
- 2 Tbsp. harissa paste (or to taste – I used Tesco Ingredients)
- 1/2 tsp. salt
- 400 grams chopped tomatoes (plus half a can of water)
- 1 can chickpeas
- 2 Tbsp. coriander leaves (roughly chopped, plus extra for garnish)
- 1/2 lemon
- 100 grams pomegranate seeds (or seeds from half a pomegranate)
- 200 grams couscous (wholewheat, or normal couscous, if you can’t find wholewheat)
- 300 mL boiling water
- salt
- pepper
- 2 Tbsp. coriander leaves (chopped)
- 1 lemon
- 2 Tbsp. olive oil (good quality)
- 25 grams flaked almonds
