- oil (for cooking)
- 100 grams quinoa (this is quite a lot of cooked quinoa, if you’re not feeling very hungry I’d do 75-80g for two)
- 1 avocado (flesh diced)
- 1 mango (flesh diced)
- 1 red onion (small, finely chopped)
- 1 chilli (small, finely chopped)
- 1 handful fresh coriander (chopped)
