- harissa breakfast sausage (as needed)
- 12 eggs (poached)
- smoked paprika hollandaise sauce (as needed)
- frisee (as needed)
- 4 lb. pork trimmings (ground, 50/50 blend)
- 1/2 Tbsp. spice mix (Harissa)
- 1/2 Tbsp. allspice
- 1/2 Tbsp. star anise
- 1/2 Tbsp. cumin
- 1/2 Tbsp. smoked paprika
- 1/2 Tbsp. cinnamon
- 3 sprigs fresh cilantro (rough chopped)

Directions
- Combine pork, seasonings and cilantro.
- Form into 3 oz. patties, bake at 350°F convection oven for 25 minutes.
- Top breakfast sausage patty with poached egg and smoked paprika hollandaise.
- Plate with frisée.
