- 25 grams butter
- 1 kg hare (boneless, diced, see tips)
- 50 grams plain flour
- 1 onion (large, very finely chopped)
- 1 celery sticks (very finely chopped)
- 1 carrot (very finely chopped)
- 2 fresh thyme sprigs
- 2 garlic cloves (crushed)
- 2 bay leaves
- 3 juniper berries
- 250 mL red wine
- 400 grams chopped tomatoes
- 250 mL fresh chicken stock
- 10 grams dark chocolate (grated, 100% cocoa solids – we used Willie’s Cacao, from larger supermarkets)
- 1 garlic clove (crushed)
- 1 Tbsp. capers (drained and rinsed)
- 4 cornichons (chopped)
- 2 anchovies (in oil)
- handfuls fresh parsley leaves
- handfuls fresh basil leaves
- 1 tsp. Dijon mustard
- 1 tsp. red wine vinegar
- 2 Tbsp. extra-virgin olive oil
- 175 grams polenta (cornmeal, see tips)
- 1 knob butter
- 75 grams Parmesan cheese (grated, plus extra to serve)
