- 1 chorizo sausage (link)
- 1 1/2 tsp. chipotle pepper (chopped finely with adobo sauce)
- 28 oz. San Marzano tomatoes (hand crushed)
- 14.5 oz. diced tomatoes (and juice)
- 15 oz. red kidney beans
- 19.75 oz. pinto beans (whole)
- 2 cloves garlic (minced)
- 1 sweet onion (medium, chopped)
- 1 poblano peppers (large or 2 small, charred, skinned, seeded and chopped, could substitute with canned chilies)
- 4 jalapeno peppers (charred, skinned seeded and chopped, could substitute with canned chilies)
- 1 cup water
- 1 Tbsp. chili powder
- 1/4 tsp. garlic powder
- 1/4 tsp. onion powder
- 1/4 tsp. crushed red pepper flakes
- 1/4 tsp. dried oregano
- 1/2 tsp. paprika
- 2 tsp. ground cumin
- 1 tsp. coriander
- 1 tsp. sea salt
- 1 tsp. black pepper
