- 2 Tbsp. Creole seasoning (with salt)
- 1 ham bone
- 1 1/2 cups chopped ham
- 2 qt. chicken broth
- 2 cloves garlic (crushed and minced)
- 1 onion (large, diced)

- 2 carrots (large, diced)
- 3 celery stalks (diced)
- 1/4 tsp. ground black pepper
- 1/4 cup fresh parsley (chopped, or freeze-dried)
- 2 tsp. Creole seasoning
- 1 pinch thyme
- 1 cup corn kernels (I like shoepeg)
- 14.5 oz. diced tomatoes (cans petite)
