I made it creamy by mashing the potatoes as suggested and my hubby loved the flavor but he thought it would be better with additional chunky potatoes added for a heartier soup. So I added them. He loved it even more!
***I also added a few boiled carrots into the potato mash for a little color and a few more nutrients.

started with the trinity - large carrot, two celery stalks, and onion. turned out great. used two pounds of russet potatoes.
