- 2 cups navy beans
- 2 cups celery (chopped)
- 2 cups carrots (chopped)
- 1 onion (large, finely chopped)
- 3 cloves garlic (finely minced)
- 4 sprigs fresh thyme (or 2 teaspoons dry)
- 1/4 cup fresh parsley (or 1 tbsp. dry)
- 1/2 tsp. ground pepper (fresh)
- 9 cups chicken stock
- 1 Tbsp. olive oil (for sautéing vegetables)

This is really a flavorful and easy soup! Perfectly seasoned! I used Northern beans and a Honey Baked ham bone! Will definitely make this again!

Made last night with leftover ham from Thanksgiving and it turned out perfect! I cooked it in crockpot on low for 8hrs. Delicious 😋

Made modifications by adding other veggies too, but that’s the fun flexibility of soups! Good base recipe to experiment with! Great for leftover ham from the holidays!

I couldn’t find a ham hock, which I love to use in any ham soup. Even without it it was delicious!

Awesome recipe! I needed a lot more salt/garlic salt and added some gently sautéed spinach to the beans about 5 minutes before I served it.
Definitely a keeper!

I used a leftover smoked ham. Easy to make and a lot of flavor will make again.

My go-to when I have leftover ham. It always turns out great and you can tweak with whatever is on hand. I added some potatoes and some leftover drippings from the ham.

This soup is amazing. I had a couple of changes out of necessity and that was an extra cup of beans to an extra cup of broth, and Basil for parsley because I was out. It’s a nice Hardy meal for a cold wet winter day and perfect use of that leftover Christmas Ham.

This recipe is very good. I made half the recipe and it filled a 6 quart pot. I did a “fast soak” of my beans, saved the water and added it to the mixture. The extra starch in that water helped to flavor the soup. I added a sprinkle of grated Parmesan cheese as a garnish which added flavor. I also added a can of fire roasted diced tomatoes which added flavor as well. Very tasty and I will make it again!

Very good recipe. Used smoked ham shanks. I also added potatoes, parsnips and turnip.
