- 100 grams anchovies (small dried)

- 1 Tbsp. bouillon (better than-optional)
- 1 tsp. sugar

- 6 tofu puffs
- 1 firm tofu (large block of, if not using tofu puffs)
- 2 Chinese eggplants (medium)
- 2 bitter gourd (large)
- 12 okra ((lady's finger))
- 10 shiitake mushrooms (large, soaked until soft if using dried)
- 6 red chili peppers (large)
- cooking oil (for pan-frying)
- 1 tsp. cooking oil
- 1 tsp. minced garlic
- 1 cup water
- 1 Tbsp. soy bean (ground, sauce,)
- 1 Tbsp. hoisin sauce
- 2 Tbsp. oyster sauce
- 1 Tbsp. sugar (or more to taste)
- 2 tsp. cornstarch (+ 3 tsp water)
- 1 stalk green onions (finely chopped)
