  • 2 onions (roughly chopped)

  • 2 sprigs fresh thyme
  • 400 milliliters ale (good-quality)
  • 500 milliliters beef stock

    A flawless recipe, though always takes longer than you first think, so start in plenty of time and allow at least an hour for it to simmer to thicken properly. Sometimes have to add a bit of flour but always turns out better if not.
