- 1 Tbsp. salt
- 14 cups water
- 5 slices ginger
- 2 whole scallions
- ice
- chicken fat (taken from the back cavity of the chicken)
- 4 cloves garlic (minced)
- 3 cups white rice (preferably jasmine rice, washed and drained)
- chicken stock (from cooking the chicken)
- 2 tsp. salt
- 4 inches ginger (piece, roughly chopped)
- 1 clove garlic
- 3 Tbsp. oil
- 1 pinch salt
- 1/3 cup water
- 3 Tbsp. rock sugar (about 3 sizable chunks, or just measure out granulated sugar)
- 1/3 cup dark soy sauce
- 6 red chilies (fresh, we used Holland chilies)
- 3 inches ginger (piece)
- 3 cloves garlic
- 1/2 tsp. sesame oil
- 1 tsp. salt
- 1/2 tsp. sugar
- 1 lime (juice of 1 small lime)
- 1 tsp. rice vinegar (or white vinegar)
- 5 Tbsp. chicken broth (from boiling the chicken, or until a saucy consistency is achieved)

Amazing! I went into this thinking I’ll never replicate what I ate at home (From Malaysia, living in the US). Blown away. Loved it and my kids couldn’t get enough.

WOW!!! This gotta be the best poached chicken I'VE ever had. I can't believe something this easy can result in such quality taste and texture. After the water comes to a 2nd boil per the instructions, i left it covered with the heat off for 18 minutes per lb. My chicken was 3.4 lbs, so that's about 62 minutes. Chicken came out PERFECT!
