Description
This is a recipe that my mom had done for my family when we were young, it's very simple only 7 ingredients

- 16 Tbsp. flour
- 1 stick butter
- 2 onion (large, chopped)
- 5 lb. potatoes (washed and sliced 1/4 inch thick with skin left on)
- 20 oz. swiss cheese (sliced thinly or shredded)
- 1 1/2 gal. milk
- 4 pkg. hotdogs

Directions
- wash potatoes take a mandolin and slice potatoes 1/4 inch thick leaving the skin on put in water to par cook them, let them come to the first boil stage, then remove from pot put in colander and run cold water over them.
- while the potatoes are cooking, in large sauce pan take stick of butter and chopped onion and saute the onion till just translucent
- add flour to make and cook the roux for about 5 to 7 minutes just till it starts to turn a light tan.
