- 1 yellow onion (small, diced)
- 1 Roma plum tomatoes (diced)
- 1 lb. lamb shoulder (bone-in, cut in small pieces, bone-in gives it more flavor, use boneless if that’s what you have)
- 1 Tbsp. spice mix (kabsa, or make your own with the recipe below)
- 5 cardamom pods
- 5 cloves (or 1/8 teaspoon clove powder)
- 2 cinnamon sticks (or ½ teaspoon ground cinnamon)
- 2 1/4 cups water (or just enough to cover the rice)
- 3 dried limes
- 1/2 tsp. saffron threads
- 1 tsp. sea salt
- 1 1/2 cups basmati rice (thoroughly washed)
- 1 tsp. cumin (ground)
- 1 tsp. turmeric (ground)
- 1/4 tsp. pepper flakes
- 1/2 tsp. ground coriander
- 1/2 tsp. fennel powder
- 1 tsp. ground ginger
- 1/2 tsp. allspice
- 1 Tbsp. extra-virgin olive oil
- 15 oz. tomato sauce (plus 1 tomato, finely chopped)
- 1/2 tsp. sugar
- 1/2 tsp. salt
- 3 large garlic cloves (crushed, particularly roasted garlic)
