- 1/2 tsp. black pepper
- 1 onion (large chopped, white or brown)
- 3 leeks (white stalks not green tops)
- 3 garlic cloves (minced)
- 3 Tbsp. flour
- 22 oz. Guinness Beer
- 2 cups beef broth
- 4 carrots (peeled and cut 1/2" pieces)

- 3 sprigs thyme (or sub with 1 tsp dried thyme leaves)

I thought this was a traditional tasting Irish stew. I used the chuck roast meat. I used two cans of Guinness which was bit a bit more than the 22 ounces called for. I cooked the full time.

I have to agree this was not may favorite. I upped the amount of veggies (added parsnips). I used fresh thyme but felt that dried would have been a better choice. Added a splash of balsamic vinegar at the end to perk it up a bit. But still found it to be lacking.

Wasn’t crazy about this recipe. It’s very watered down, and despite the Guinness and spices, very bland.

Excellent I had to add some corn starch to thicken gravy . I added more liquid as we are gravy fans.
