- 1/4 cup cilantro leaves (packed fresh)
- 1 strip jalapeno pepper (seeds and ribs removed, finely chopped)
- 1/4 cup avocado (grapeseed, or other neutral/mild olive oil)
- 1/4 tsp. ground cumin
- 1/2 tsp. kosher salt (*, note: not all salts are created equal!)
- freshly ground black pepper
- 4 oz. grilled chicken breast (or rotisserie or leftover roast chicken, cubed)
- 3 oz. grape tomatoes ( halved)
- 1/4 cup diced red onion (finely, roughly 1 ounce)
- 10 corn tortilla chips (large, 1 ounce, crushed lightly with hands)
- 1 avocado (small, pitted, and cut into medium chunks)
- 3.5 oz. spring greens (mixed)
- 1 wedge lime
- vinaigrette (lime cilantro jalapeno, see above–shake before using!)
