- 2 Tbsp. olive oil
- 2 lb. ground turkey (use turkey with less than 10% fat for the South Beach Diet)
- black ground pepper
- salt
- 1 onion (large, diced in 1/2 inch pieces)
- 1 Tbsp. minced garlic
- 2 tsp. ground cumin
- 3 cups pink beans (cooked, or pinto beans, 3 cups = 2 cans. I used Rancho Gordo Yellow Indian Woman beans, cooked in a crockpot slow cooker, then drained.)
- 4 oz. Anaheim chile (diced green)
- 3 cups chicken stock (or use 2 cans chicken broth)
- 16 oz. pinto beans (refried)
- 1/4 cup water
- 1/4 cup chopped cilantro (or more)
- lime wedg (sliced, for serving)

I made it ALMOST as written//did not change it on purpose, but had no resources to get the Anaheim Chili// so changed for 1/2 bell pepper and a small can of green chili// it was good.. I had to increase the Cumin, because I did not use exact measures on items, and went for taste.. It was good and our family enjoyed it, thank you for sharing. I hate to rate it, since I could not have the right peppers... but I rate it without them..please know it was worth making again and it was very filling. I give it a 4 stars because I went to 8 different stores in my area, and none had these peppers..including 3 international stores.. so not sure where you find those peppers..please do share..

Great family meal. As other reviews suggested, I left out the refried beans. Used cans of diced green chilis and added some potato cubes and diced red bell peppers as well. Everyone loves this dinner with shredded cheddar and a little Tapatio on top.

This is comfort food around my house!
I’ve followed this recipe and also used it as a base recipe to add my own favorite ingredients to it, such as canned mushrooms, and fresh tomatoes, I skip the refrieds to keep this more as a stew.
Delicious and easy every time:)

This has become a staple in my arsenal. I call it Mexican Chili since it has great Mexican flavors. I do add a can of creamed corn and a little corn starch to thicken. My husband and I love it!

It actually turned out really fantastic. I must have skipped the thickening with refried beans or I didn’t see it on the list. No worries though I used a cornstarch slurry, also I added corn to the recipe which gave it a sweet profile as well as savory.

Recipe turned out good but I just felt like I needed some kind of sauce, I’m not sure what kind though but to me I needed a sauce or something added otherwise spices and everything tasted

We don't follow this recipe exactly, but piece meal together multiple similar recipes. It is worth it. Last year during the super cold winter, we made this once a week.
