- 1 lb. lean ground beef (very, less than 10% fat)
- 3 tsp. olive oil (depending on your pan)
- 2 cups homemade chicken stock (or 1 can, 14 oz. can chicken broth)
- 3 cans beef broth (14 oz. can, depending on how thick you prefer the soup; start with 2 cans and add more if desired)
- 1 can diced tomatoes with juice (14.5 oz. can)
- 1 can sauerkraut
- juice
- 1 Tbsp. stevia (granulated, brown sugar, or sweetener of your choice)
- 1 Tbsp. worcestershire sauce (gluten-free if needed)
- 4 bay leaves (dried)
- 3 Tbsp. parsley (minced, or 1-2 T dried parsley)
- 1 tsp. rubbed sage (dried)
- 1 onion (large, chopped small)
- 1 Tbsp. minced garlic (or less if you're not that fond of garlic)
- 2 cups water (if needed)
- salt
- fresh ground black pepper

Made it for someone who likes sauerkraut but wanted it in other ways other than right out of the jar... I was told it was delicious. And as someone who doesn't eat it(there a couple of us) we say its pretty good ourselves.

Really good! Had my doubts, but it turned out well. Didn't change recipe much, only skipped salt. Sauerkraut juice is salty enough. If you are a kraut fan, make this soup!

I crave this soup. So good. I made it many times. It needs no changes, but over time this is what I do now. I chop a lot of Vidalia onion. Instead of small can of diced tomatoes, I use a 28 ounce can of crushed tomatoes. Ground beef, is good, but ground turkey is good too. Once I added leftover cooked ground beef mixed with marinara sauce...the more tomato flavor the better. So today I added half a jar of marinara. I put the soup over cooked brown rice. I never tire of it. Tastes like it came from a restaurant. Thanks for the recipe!

Still making it. Today I added 1/3 of a small cabbage chopped and sauteed in butter. But I used the red onion I had on hanf. Tasted the cooked ground beef / red onion; the onion hot very sweet. Next time vidalia or yellow as I usually do. But I bet all the flavors will still be fine. If I don't have meat, I add black, northern, or kidney beans.

This soup was fabulous! I had purchased sauerkraut specifically for this recipe and bought a larger 28 oz can so I decided to put the entire can in the soup. I also had in the pantry a 28 oz can of Italian spiced diced tomatoes and also put the entire can in the soup. I was in a rush and didn't saute the onions and garlic, just put it directly in. This turned out fabulous! I had enough to freeze for a quick weeknight dinner.
