- 1 lb. ground turkey
- 1 cup cooked quinoa
- olive oil (for sprinkling)
- 1 medium onion (about 5-6 oz, finely chopped)
- 1 cup crumbled feta cheese
- 1/2 tsp. kosher salt
- 1/2 tsp. black pepper
- 1/3 cup Italian parsley (chopped)
- 1/3 cup chopped cilantro
- 1 Tbsp. chopped parsley (each, and cilantro for garnish, optional)
