Yummy! The only thing I'd do differently is add the turkey after sautéing the onions and other veggies. In browning the turkey first, it overlooked and got a little tough. Okay once all the liquid was added. Overall, a very yummy pot of minestrone. My roommate and I both really like the added sweetness of the squash.
