- 1/2 onion (large, chopped small)
- 4 stalks celery (chopped small)
- 2 tsp. olive oil
- 1 tsp. dried thyme
- 1/2 tsp. poultry seasoning
- 1 tsp. garlic (finely minced fresh, or more)
- 10 cups homemade chicken stock (or use 6 cans chicken broth, but homemade stock is more flavorful)
- 2 Tbsp. base (vegetable soup, I use Better Than Bouillon Organic Vegetable Base.)
- 8 oz. mushrooms (brown Crimini, washed and cut into bite-sized pieces)
- 1 lb. ground turkey (lean, I use turkey with 10% fat)
- 1 lb. butternut squash (small cubes, almost 3 cups of cut squash cubes, I used half of a 2 lb. package of pre-cut squash cubes and cut them smaller)
- 1 1/2 cups kale leaves (baby, or chopped kale leaves)
- 1 cup brown rice (or cooked rice, I used Uncle Ben's Converted Rice.)
- 2 1/2 Tbsp. balsamic vinegar
- ground black pepper
- salt
- grated Parmesan cheese (freshly, for serving, optional)

Fantastic meal takes a lot of time and effort but amazing. I let the butternut squash soften a little but for it to go more into the flavor and some were hard cubes

This soup is delicious. I’m always looking for new ways to prep ground turkey. And Im not a fan of butternut squash but this was a good. And the touch of balsamic vinegar was a nice touch. I subbed mozzarella for the Parmesan.

Make this often, it's a winner! Good stock definitely makes a difference. The time is inaccurate--just simmer time alone is longer than 65 minutes.
