- 1/2 lb. extra lean ground turkey
- 1/2 yellow onion (diced)
- 1/2 cup carrot (diced)
- 2 cloves garlic (minced or pressed)
- 1/2 tsp. ground ginger
- 1/2 tsp. black pepper
- 2 Tbsp. soy sauce
- 2 Tbsp. seasoned rice vinegar
- 2 Tbsp. hoisin
- 1/2 Tbsp. chili pepper and garlic sauce (plus more to taste, we did 2 tablespoons)
- 2 large eggs (beaten)
- 1/2 cup frozen peas
- 2 cups cooked brown rice (leftover unseasoned, chilled in the fridge)
- 1 tsp. sesame oil
- cilantro (for garnish if desired, optional)
- green onions (for garnish if desired, optional)
- sesame seeds (for garnish if desired, optional)
- Sriracha (for garnish if desired, optional)
