- salt (I love pink Himalayan salt)
- cayenne pepper (optional, for a little heat)
- sugar (optional, if you prefer a sweeter sausage)
- 1 lb. ground pork (I used 80/20)
- 1 Tbsp. olive oil
- 1 tsp. ground sage
- 1 tsp. fennel seeds
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1/2 tsp. cracked pepper (freshly, or ground pepper)
- 1 tsp. salt
- 1/4 tsp. cayenne pepper (optional)
- 2 tsp. brown sugar (optional)
