I used this as a framework for the veggies (broccoli, shredded carrots) and seasonings (coconut vinegar instead of rice wine vinegar, honey instead of brown sugar, chili-spiced sesame oil) I had on hand. To extend the sauce, I saved some water after boiling the udon and shook it with the rest of the sauce ingredients. We all liked the result, and it was easy/quick enough that I could see making it again.

Super easy, super delicious. Can't wait to do it again and add in some more ingredients.

Very tasty. Easy to improvise with different vegetables. I didn’t have cauliflower . Used brown mushrooms chopped, snow peas cut diagonally in thirds and only red peppers. Instead of broccoli I used broccolini. Cut stems in pieces and flowerets. I sautéed the mushrooms and red peppers with the meat. Microwaved the other vegetables to the right doneness and then added after mushrooms and red peppers were cooked. I also used Vietnamese brown rice and green tea noodles. Awesome.

This turned out great and was easy to make! We added extra veggies like carrots and spinach.
