- 1/4 cup red bell pepper (or chopped green)
- 15 oz. black beans (drained and rinsed)
- 8 oz. tomato sauce
- 1 cup corn ({I used frozen})
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 1/2 tsp. chili powder
- 1/2 tsp. garlic powder
- 1/4 tsp. ground cumin
- 2 Tbsp. fresh chopped cilantro
- 1 cup cheese (shredded {cheddar or Monterey jack work best, but use whatever you have on hand})

Super yummy. I added jalapeño and extra spices to give it an extra kick. Would definitely make it again.

My family really liked this! I made some modifications based on what I had on hand but I think that's one of the good things about this recipe-it's so easily modified!

Very good. It's a cheap meal, my kids loved it. It makes for good leftovers and it's easy to make. Doesn't get much better than that
