- 6 sweet mini bells (or chopped bell pepper)
- 1 cup cooked chicken (diced leftover, or more)
- 4 slices halloumi (cut 1/2 inch thick)
- olive oil (for brushing cheese)
- 1/4 cup fresh lemon juice
- 1/2 tsp. Dijon mustard
- 1/2 tsp. minced garlic (finely, or use garlic puree in a jar)
- 1/4 tsp. Greek seasoning (optional, Greek seasoning has salt, garlic, lemon, oregano, pepper, and marjoram)
- black ground pepper (fresh, to taste)
- 6 Tbsp. olive oil
