- 1/4 cup thyme leaves (I used a combo of regular, lemon, and lime thyme because that's what I have growing - use what you can get your hands on)
- 1/4 cup olive oil
- 1 clove garlic (rough chopped)
- 1 lemon
- 1 tsp. salt
- 1 tsp. pepper
- 1 cup ricotta cheese
- juice (zest and, from another lemon)
- 1 Tbsp. thyme leaves (see combo above)
- 2 slices brioche
- 10 cherry tomatoes (each red and yellow)
- Fontina (sliced, enough to cover each bruschetta, according to how cheesy you like things)
- olive oil
- 1 pinch salt
