- 1 red bell pepper (cut into 1 inch strips)
- 1 yellow bell pepper (cut into 1 inch strips)
- 1 small yellow onion (1/2 inch thin slices)
- 2 yellow summer squash (medium, 1/4 inch thin slices)
- 2 medium zucchini (1/4 inch thin slices)
- 2 bok choy (small, Halved)
- 1 red onion (small, 1/2 inch thin slices)
- 1 handful asparagus (cut off the stalky hard ends, about 1 inch)
- 8 oz. halloumi cheese (roughly package of, or Grilling cheese, 1/4 inch thin slices)
- 1 cup long grain brown rice
- 2 cups water
- 1 dash sea salt
- 3/4 cup cilantro (lightly packed and finely chopped)
- 5 Tbsp. extra virgin olive oil
- 2 Tbsp. red wine vinegar
- 3 cloves garlic (depending on size, finely minced)
- 1/4 tsp. sea salt
- 1/4 tsp. ground black pepper
- 1 pinch red chili flakes (optional)
