- 1 handful basil leaves (torn)
- 1 Tbsp. capers (drained)
- 1 yellow bell pepper (or red, seeded, roasted and cut into strips, you can use canned marinated pepper)
- 1 Tbsp. olive oil
- 1 Tbsp. dried oregano

- 1 medium zucchini (or other summer squash)
- 1 eggplant (small to medium)
- 1/2 loaf french bread (torn into bite sized pieces, 4 cups)
- 4 oz. fresh mozzarella (torn into bite sized pieces)
- 1 clove minced garlic
- 1/4 tsp. Dijon mustard
- 1 Tbsp. fresh rosemary (or 1 teaspoon dried)
- 2 Tbsp. balsamic vinegar
- 1/4 cup extra-virgin olive oil
- 1/4 tsp. sea salt
- 1/4 tsp. freshly ground black pepper
- 2 anchovies (mashed or 1 teaspoon anchovy paste, optional)
