Description

Grilled vegetables add a smokey taste to this frittata. Great for a vegetarian meal. Have it for breakfast, lunch or dinner. The perfect dish.

Ingredients

  • 1 1/2 cups vegetables (grilled, I used red and yellow peppers and eggplant)
  • 12 large eggs
  • 1/2 cup whole milk (I used half and half)
  • 1/2 cup mozzarella cheese
  • 1 teaspoon spice mix (Italian)
  • 1 teaspoon olive oil
  • 1 garlic cloves (finely chopped)

    Directions

    1. Preheat the oven to 350°F . Coarsely chop the grilled vegetables.
    2. In a medium bowl, whisk together the eggs, milk and Italian spices. Season with salt and pepper; set aside.
    3. Heat the olive oil in a 12 inch ovenproof nonstick skillet over medium heat. I used a cast iron skillet. Add the garlic and cook, stirring until softened (about 2 minutes).
